Let's talk Blondies! In the classic 2007 Nancy Drew film, Nancy Drew is solving a case and is on the hunt for clues. When she visits an office and tries to get some information from a clerk, he says no, and instead of persisting, she places a perfectly wrapped blondie on his desk as a thank-you for his time and makes her way out. After taking one bite, he calls her back and gives her the clue that solves the mystery! This was a classic scene, and thats the type of reaction I look for all the time 🤭

Blondies are like brownies, but without cocoa. It's a sweet, delicate golden brown square that is soft and chewy and is so rich in texture and flavor. Blondies are a classic dessert, but somehow not a common dessert you'd see at a bakery or coffee shop. Dare I say, it's underrated, and more people should give it a chance!

Ingredients:

  • 1 1/2 sticks of unsalted butter, melted

  • 1/2 cup of granulated sugar

  • 1/2 cup of brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/2 cups of flour

  • 1/2 teaspoon baking powder

  • sprinkle of salt

  • 1/4 cup of walnuts

  • 1/4 cup of chocolate chips

  • dash of cinnamon

Steps:

  1. Preheat your oven to 350 degrees, and lightly spray and line a 9x9 or 8x8 dish with parchment paper.

  2. In a mixing bowl with the whisk attachment, add your melted butter and sugars and mix on speed 4 (with a kitchen aid or other mixer) for 2 to 3 minutes until well combined. Add in your vanilla extract and egg and mix until incorporated.

  3. In a separate bowl, add your flour, baking powder, salt, and cinnamon and lightly whisk.

  4. Slowly incorporate your dry ingredients into the wet ingredients until fully combined. Add in your walnuts and chocolate chips and mix with a spatula.

  5. Add the mixture to the dish, and lightly tap the pan to a surface to ensure the mixture is evenly distributed.

  6. Bake for 30 minutes or until golden brown. If it's a pale brown, bake for 5 or so more minutes.

  7. Remove from the oven and cool for an hour.

  8. Bon Appetit!
