I love Panera Bread, but I'm not gonna lie... it's kind of expensive. No matter if I am getting breakfast for two, or lunch for myself, I find I'm spending well over $30 bucks. I thought, how hard could it be to recreate myself? Answer, not hard at all. One of my favorite menu items is the Chipotle Chicken Avocado Melt and I can devour it in a sitting. I've made this several times, but this rendition of mine is probably the best, and naturally, I had to share š
I made a few tweaks to this recipe, and I think it tastes better than the original. The original melt uses focaccia bread, and though I have tried it with that, I used Sourdough bread that pairs even better with all the toppings. The next thing I added was arugula, which was mouth-wateringly delicious! It adds a crunch that is so divine, which I think should be added beside the bread. The last substitution is the cheese, the essence of it all! I know this melt calls for white cheddar, which I wouldn't steer away from honestly, but my choice of cheese is Swiss. Now with all of these toppings combined, it makes a fantastic sandwich! Now I am not saying you shouldn't eat at Panera, but once you take this recipe out for a ride, you're visits to the restaurant will likely decline š
Chipotle Chicken Melt š„Ŗ
Prep time: 15 mins
Ingredients:
2 chicken breasts
salt and pepper, for the chicken. I also add red pepper for a kick
1 bunch of arugula
Swiss cheese
2 tablespoons of Adobe sauce
3 tablespoons of Mayonnaise
1 tablespoon of Harissa paste
1 avocado, sliced or you can use guacamole
sourdough bread or brioche bread, your bread of choice, sliced and toasted
Steps:
Boil water in a pot, and add your chicken breasts. Add your seasonings to the water, and boil for 15-20 mins, or until the chicken reaches an internal temperature of 165 degrees. Remove from the water, shred the chicken, and set aside.
Mix your Adobe sauce and mayo. Set aside in the fridge.
Toast your sourdough bread, and begin assembling your sandwich. Start with the mayo on both pieces, then add your cheese, harissa paste, avocadoes, and shredded chicken. Add the arugula to one piece of the bread, then gently fold and press down. Cut in the middle and serve.
