Cranberry Blondie Bars 🎄



Raise your hand if you love cranberry blondie bars 🙋🏻‍♀️ Samsiesss. I love these and used to obsess over treating myself throughout the winter by buying them (at a shall-not-be-named coffee place). I decided why wait for them to come around; why not just make them myself? Well, I decided to answer that question, and OH BOY, was it yummy!


A fun little fact about me, I wouldn't say I like white chocolate. The smell, taste, all of it. But somehow these cranberry bars were the exception, and marrying the frosting and cranberries to the white chocolate chip made it worth it. Now for my rendition, I kept going back and forth on whether to incorporate the white chocolate and came to a compromise. I added the white chocolate chips to the blondie mixture but opted out of drizzling it on the frosting. If you decide it needs that drizzle, I support you!


What I love about blondies is there are so many renditions, you can add your favorite add-ins depending on the season, such as walnuts and chocolate chips for the fall, and cranberries for the winter. I am jumping the gun and making this months before winter has arrived, but I couldn't help myself 😊


Cranberry Blondie Bars


Ingredients:


  • Blondie recipe (check the recipe on my page)

  • 1/2 cup of walnuts (optional)

  • 1/2 cup of white chocolate chips

  • 1/2 cup of cranberries


frosting:

  • 8 ounces of cream cheese, at room temp

  • 3/4 cup of confectionery sugar

  • 1 teaspoon of orange zest

  • dash of vanilla extract

  • 1/3 cup of cranberries


Steps:

  1. Follow the blondie recipe, linked here! https://www.chefroo.com/post/blondies-from-nancy-drew. Make sure to add your mix-ins: cranberries and white chocolate chips. Bake for 30 minutes, and let cool before adding your frosting.

  2. For the frosting, add your cream cheese and confectioners sugar to the mixing bowl in a stand mixer with the whisk attachment, and beat on medium speed until fully incorporated. Add the orange zest and combine.

  3. Spread the frosting evenly on the blondies, and sprinkle the cranberries as needed. Cut into squares, then triangles, and serve.
