Double Chocolate Chip Cookies with Terry's Oranges 🍫🍊



I recently traveled to London (aka my favorite city) and was ecstatic to check out the local markets like Waitrose and Tescos. I love UK cookies and chocolate, so I was ready to pack a suitcase of my favorite things, and I certainly did! My favorites are digestive cookies, jaffa cakes, and terry oranges which I lucked out in finding all and much cheaper than what the US sells them for. I have seen recipes using Terry's orange as the form of chocolate for cookies, and I thought that was absolute genius! I decided to recreate it into a double chocolate cookie form, and that mouthful of orange with chocolate is simply chef's kiss! 💋


I am not a fan of white chocolate and have VERY strong opinions about my dislike for them, but I digress. With my distaste for white chocolate, I wanted a nice balance with the orange flavor, so I added a decent amount of dark chocolate as well and it was divine.


Pair this with a glass of milk, or with a cup of tea as the Brits do, and indulge in a cookie or two 😉


Double Chocolate Chip Cookie with Terry's Oranges


Ingredients:

  • 1/2 cup butter, unsalted, softened or melted

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 2 teaspoons of vanilla extract

  • 1 large egg

  • 1 teaspoon baking soda

  • pinch of salt

  • 1 1/3 cup AP flour

  • 2/3 cup cocoa powder

  • 2 tablespoons milk

  • 1 terry orange, smashed and roughly chopped

  • 1/2 bags of dark chocolate chips or dark chocolate bars broken into pieces


Steps:

  1. Preheat over to 350 degrees, and line two baking sheets with a silicone mat. (You can also refrigerate your dough for about an hour, and you can skip this step until you are ready to bake them).

  2. In a bowl, with a paddle attachment, add the sugars and butter and beat until fluffy, for about 3 minutes, on medium speed. Gradually add your egg and vanilla extract and beat on high until fully combined.

  3. In a separate bowl, mix your flour, cocoa powder, baking soda, and salt. Once combined, on low speed, add your dry ingredients to the wet mixture, adding 1/3 dry each time. The mixture will be thick, which is what we are looking for. Then add in the milk, and it should then change to a bit of a sticky mixture. Add in your Terry oranges and chocolate chips and fold in with a spatula.

  4. Scoop dough with a spoon, gently roll it in the palm of your hands and place it onto the tray.

  5. Bake for 12-14 mintues.

  6. Remove from oven and let cool for about 5 or so minutes.
