Falooda is a staple drink I enjoy every summer, but between you and me, I make this year-round. It is sweet in all the right ways, with rooh afza syrup on the bottom, jello, and topped with vanilla ice cream, it's a drink I can't get over. Fun fact about Falooda: its origins come from Persia, but over time different adaptations were created. During the Mughal Empire, their form of falooda made traction and is one of the more popular renditions, which I recreate all the time.

Falooda tastes the best when made fresh, and I have tried falooda in Indian and Pakistani restaurants, but I haven't found one that has stood out. All of these ingredients can be found at your local Indian and Pakistani markets, and I guarantee you'll enjoy it the moment you take your first sip.

Falooda

Prep time: 25 mins Cook time: 15 mins Cool time: 8-12 hours

Ingredients

  • Shan Falooda Mix (any flavor works)

  • 3 cups of Milk

  • 1 packet of Jello mix, any flavor

  • 1/2 cup vermicelli noodles

  • 1 tablespoon Rooh Afza, and more for garnish

  • 1 small scoop of Vanilla ice cream (optional)

Steps:

  1. Follow the instructions on the Shan Falooda box. It requires you to boil 3 cups of milk, then add the falooda mix. Mix on medium heat for 8-10 mins.

  2. When you add the falooda mix to the milk, additionally add the vermicelli noodles.

  3. Make jello while or after the falooda milk has been mixed. Follow the instructions on the jello box, and place it immediately in the fridge.

  4. Once the falooda milk has been fully mixed, remove from heat and let cool at room temp for up to an hour. Place in fridge for up to 8 hours, or overnight.

  5. The colder the falooda milk the better!

  6. Once the jello has been set, slice it into small squares. This will make the jello sit easier in the drink, and it's more visually appealing.

  7. Grab glasses of choice, and add the rooh afza to the glass first. This should be your base.

  8. Add the falooda milk halfway into the glass. Then add pieces of jello and a bit more of the milk. Top off with a small scoop of vanilla ice cream. You can drizzle rooh afza onto the ice cream or once the glass is full.

  9. The best way to sip the drink is by using a larger straw, particularly a boba straw.

  10. Bon Appetit!
